This recipe is for the very best keto blueberry muffins. These are the most delightful and most guiltless treats for while on the keto diet. They also pair nicely with chia seed noatmeal!

Keto Blueberry Muffins — a low carb (and kid-friendly) “treat”

These keto blueberry muffins are a real treat not just for adults, but for children as well. I have a 6, 4, and 2 year old (and 4 month old..but she’s not quite there) who ask for either these blueberry muffins or keto pancakes daily. This is a great way to feed the family without the worry about high insulin spikes.

This is also a great thing to bring as your dish to a potluck. Sometimes parties can be overwhelming if you’re following a strict ketogenic diet because you want to enjoy delicious food like everyone else. These muffins will do just that — allow you to indulge without the guilt.

Ingredients to make the Keto Blueberry Muffins

To make these delicious keto blueberry muffins, you need just a few ingredients:

Making the Keto Blueberry Muffin Batter

To make the batter for your keto blueberry muffins you’ll mix your dry ingredients — almond flour, baking powder and salt. Then you’ll add in your wet ingredients — the almond milk, eggs, butter, and extracts. Once the batter is well combined, add your sweetener, and mix well. Then fold in your berries. *Don’t overmix once your berries are added or else the batter will turn purple.

Baking the low-carb muffins

After you make your batter, it’s time to start baking your keto blueberry muffins. The baking time will vary greatly depending on the size of the muffin and your oven. This recipe will make 6 large muffins, or 12 regular-sized muffins. I bake the large muffins at 350°F for about 30 minutes (but start checking them at 25 minutes), or until done using the toothpick test. For smaller muffins, the baking time will be closer to 25 minutes, but you’ll want to start checking them at around the 20 minute mark.

These muffins rise a little less than non-keto muffins, so you can fill the muffin tin about 90% full (as opposed to only halfway filling the tins).

Once your muffins finish baking, let them sit in the tin for about 15 minutes before moving them, or they’ll fall apart. After about 15 minutes, they’ll begin to harden and you can move them to a place or let them further cool on a baking rack.

How to Make a Monogram on Cricut (for a Hat)

In this tutorial, I’ll walk you through how to make a monogram on Cricut.

For this tutorial, I’ll be doing a block letter monogram. By the end of this tutorial, you’ll be able to create your own personalized monograms for your Cricut projects!

The Cricut project I’ll be creating today will for some hats for a group of groomsmen, and I want to add a block letter monogram to the sides of the hats.

Step 1: Choose a font

In order to make a monogram in Cricut Design Space, you first need to be sure you have the right font. Since I’m doing a block letter monogram, I’ll be using a font called Big Noodle Titling — this tutorial will show you how to download this free font.

**If you were doing a fancy or curly style monogram, you’ll also want to check out my tutorial on welding cursive letters. I’ll also do a future tutorials on creating monograms using different fonts.

Once I download the free font, I’ll head to Cricut Design Space and create my text.

 

2. Create monogram text in Cricut Design Space

Open up Cricut Design Space, and create a new project. Then choose the text tool to create the desired text. I’ll be using three letters in each monogram for this example, since I’m using the initials to make monogrammed hats.

3. Creating a Cricut project with the personalized monograms

Gather Supplies

Now that we’ve created the monograms, it’s time to get our supplies for the project. Since I’m making hats in this tutorial, here is what I’ll need:

  • Cricut
  • Heat transfer vinyl **(if you’re unsure how to work with HTV, here is a great video tutorial).
  • Standard Grip Cricut Cutting Mat
  • Vinyl Weeding tool
  • Solid color hat (or a product you wish to apply the HTV monogram to)
  • Heat press, preferably the Cricut EasyPress

     

Since I’m applying the monograms hats, I’ll be using the heat transfer vinyl. With heat transfer vinyl, you want to make sure that the shiny side of the vinyl faces down on the mat, and that you mirror your image — a more in depth tutorial here.

To press the HTV onto your hat, you’ll need to check the fabric of the hat before determining your heat and press time. In my case, I used heat of 305°F and pressed for 2 sets of 15 seconds.

How to Connect Letters on Cricut

My previous post was a tutorial on how to use the weld tool in Cricut Design Space, but this is a more in-depth look at how to connect letters on Cricut.

How to connect letters on Cricut

1. Create your project using a connectable font

The first thing you’ll want to do is to find a font that is connectable — if you don’t have a cursive font in Design Space, this tutorial walks you through how to download free fonts. For this example, I’ll be using the font called Baillando.

For the example in this tutorial on how to connect letters in Cricut, I’ll type the word “hello”. I do this by selecting the text tool in Design Space, and typing the word out.

Spacing is everything

As you can see in the example, my letters are very spaced out. This isn’t the flow you’re probably going for when using a cursive font—so let’s fix that!

In order to connect each letter, we need to fix the spacing between letters.

To fix the spacing, select the word, then adjust the letter space, or VA. Every font is a little different, so your VA numbers may be different than mine.

What if some of my letters are still not connecting?

If some of your letters are still not connecting, it’s an easy fix. The complete video tutorial above goes over this. You need to ungroup the word by selecting “hello”, then “ungroup”.

You may have to move individual letters around to get the spacing right. Again, if this isn’t making sense, be sure and watch the tutorial video above.

When letters are all touching, it’s time to weld — **DON’T FORGET THIS STEP!!!**

Once the spacing between each letter is closed and the letters are all connected, it’s time to use your weld tool. As you can see in the video tutorial, forgetting this step can really mess up your project! To weld the letters together, select “hello”, then “weld”.

Skillet Creamy Keto Chicken Bacon Ranch

This is one a favorite recipe in our house. It’s a creamy keto chicken bacon ranch dish that is not only delicious (and loved by our kiddos), but also quick and super easy to make! I ate this almost daily late in my pregnancy after finding out I was diagnosed with gestational diabetes, since low carb helps lower blood sugar.

Ingredients for Keto Chicken Bacon Ranch Recipe

There aren’t a whole lot of ingredients to the recipe—mainly just seasoning the chicken and thickening the sauce. I also use my cast iron skillet for this recipe, which I would recommend using if you have one.

The only ingredients you need to make this keto chicken, bacon and ranch flavored meal are:

Get the bacon extra-crispy

The first thing you’ll want to do when making this delicious chicken bacon and ranch recipe is to cook your bacon. *tip* I like to use a pie dish to cook my bacon in the microwave. Be sure to cover it with either paper towels or a paper plate though to save you from a big miss later. The cooking time will vary from 5-10 minutes depending on the thickness of the bacon.

Once the bacon is nice and crispy, chop and set aside, since we will be topping our chicken bacon ranch dish with these crunchy little bits later.

Season and cook the chicken thighs

Preheat your cast iron skillet and coconut oil over medium to medium high heat while you season your chicken thighs. I use my large skillet for this recipe since we’ll be adding quite a bit of coconut milk.

You’ll season your chicken with the paprika, garlic powder, pink salt and Ranch seasoning. Once your oil is heated in the skillet, go ahead and place the chicken thighs in. Let each side brown for about 3 minutes, which will about halfway cook your chicken thighs. Then set the chicken thighs aside.

Once your chicken is cooked, you’ll want to add the butter or ghee to the same skillet you cooked your chicken in, and cook your mushrooms. Once the mushrooms fully soften (about 4-5 minutes), pour in the full can of the coconut milk in the skillet and stir. When it starts to boil, add in your almond flour, whisking until well combined.

Reduce heat to a simmer. Add the chicken back to the skillet and continue to cook until cooked throughout. For me, this was another 10 minutes or so. Once cooked, add your bacon to your keto chicken bacon ranch skillet, and enjoy while hot!

  • Cook chicken in the sauce until done — about 8-10 minutes.

Notes

How to use heat transfer vinyl for Cricut

In this tutorial, I’ll walk you through how to use heat transfer vinyl for Cricut cutting machines, or any cutting machine for that matter. By the end of this short and easy lesson, you’ll easily be able to create awesome projects with your HTV, without the confusion of it all.

Finding the perfect heat transfer vinyl brand

You will find over time that you have a preferred brand of heat transfer vinyl. For me, this brand and type is called Siser Easyweed.

Siser easyweed vinyl is not only cheaper than the Cricut brand of heat transfer vinyl, but it is also extremely durable and, like it’s name, easy to weed. I also like that the transfer paper (the clear layer above your design) is very adhesive, so you can transfer projects to your heat press without the design falling off once centered. You’ll see what I mean when you create your first HTV t-shirt project.

There is also another brand I use that I found on amazon, and it is very durable. It is much cheaper for a huge roll as well. The only downfall to using this brand of heat transfer vinyl is that the transfer paper is less sticky, and harder to keep aligned when transferring to your press.

When to use heat transfer vinyl

You can use heat transfer vinyl on so many different Cricut projects! HTV is most commonly used for making personalized t-shirts, but I’ve put together a list of other popular projects that require heat transfer vinyl:

  • T-shirts
  • Popsicle holders
  • Canvas/reverse canvases
  • Stuffed animals
  • Personalized pajamas (especially popular at Christmas time)

How to cut heat transfer vinyl with your Cricut

This step is very important to follow, and can be a little confusing at first. When cutting heat transfer vinyl, you will want to make sure the shiny side of the heat transfer vinyl is facing down on your Cricut mat. This means that the matte finish will be facing up.

Before cutting your project, you’ll also want to be sure you turn the dial to “heat transfer vinyl” so the blade cuts the right depth. **If you are using a glitter heat transfer vinyl, you’ll want to turn the dial to other and manually select glitter heat transfer vinyl in the Design Space software**

The other important thing to remember when cutting heat transfer vinyl is to make sure you mirror your image on your Cricut Design Space software before cutting. You will see all of this done in the video tutorial above.

Heat transfer vinyl isn’t inexpensive, so it’s a bummer when it goes to waste, so be sure you understand the process before cutting your first design.

Open Cricut Design Space and begin either creating your design, or uploading one you got from somewhere else.

I recently did a tutorial on using the welding tool in Cricut Design Space. I was sure to weld my letters and scooter together before cutting it, otherwise it won’t cut as one image.

Once your design is ready for cutting, you’ll select the green button labeled “Make It”.

This will take you to the next screen where you’ll see your design. You MUST mirror the image (circled below), then click continue.

» Cutting your design on the Heat Transfer Vinyl

Before placing your mat in the Cricut machine, make sure the shiny part of the heat transfer vinyl is facing downward, towards the mat. The matte side of the HTV should be facing upward, towards you. Once you’ve double checked this step, you are ready to cut your design.

If you are using a new cursive font, be sure and use this tutorial to make sure your letters connect.

» Use your weeding tool to remove excess heat transfer vinyl

Using your weeding tool, you’ll remove all the excess vinyl. Anything you don’t want on your project gets ditched. You can try to save some of this vinyl, depending on the shape of your cut image.

The final step of this process involves using your heat press. As I mentioned earlier, if you plan to make t-shirts often using heat transfer vinyl, it would be a good idea to invest in a t-shirt press or the Cricut EasyPress. Unfortunately, an iron just doesn’t do the job all that well, especially once the t-shirt is washed.

I personally prefer my t-shirt heat press, but it is much bulkier than the Cricut EasyPress (although I still use mine occasionally).

Check the settings of your heat transfer vinyl to make sure you heat is right on your t-shirt press before pressing onto the t-shirt. For Siser EasyWeed, I will be pressing at a temperature of 315ºF for 15 seconds. Once the time is up, allow your design to cool for about 10 seconds, then press again for another 5 seconds.

You will know your design is set on your t-shirt when you are able to see the t-shirt fabric lines through the heat transfer vinyl. See the image below to understand what this means.
